Cooking Steps

Roast potatoes

  • Before starting, preheat the oven to 450˚F. Wash and dry all produce.
  • Remove any brown spots from potatoes, then cut into 1/4-inch rounds.
  • To a parchment-lined baking sheet, add potatoes and 1 tbsp (2 tbsp) oil. Season with 1/4 tsp (1/2 tsp) garlic salt and pepper, then toss to coat. 
  • Roast in the bottom of the oven for 23-25 min, flipping halfway through, until tender and golden.
Roast meatballs

  • On another parchment-lined baking sheet, arrange meatballs.
  • Roast in the middle of the oven for 12-14 min, until golden and cooked through.**
Sauté green beans

  • Meanwhile, heat a large non-stick pan over medium-high.
  • While the pan heats, trim green beans.
  • When the pan is hot, add green beans and 1/4 cup (1/2 cup) water. Cook for 4-5 min, stirring occasionally, until water evaporates and beans are tender. 
  • Add 1/2 tbsp (1 tbsp) butter. Cook for 1 min, stirring often, until green beans are coated and tender. Season with salt and pepper.
  • Remove from heat and cover to keep warm.
Make sauce

  • To a small pot, add blueberry jam and 1 tbsp (2 tbsp) water.
  • Cook over medium for 30 sec, whisking constantly, until jam is smooth and warmed through.
  • Reduce heat to medium-low.
  • To the pot, add half the BBQ sauce (use all for 4 servings). Cook for 1 min, whisking occasionally, until well-combined and warmed through.
  • Remove the pan from heat.
Finish and serve

  • Sprinkle potatoes with cheese and let stand for 2 min.
  • Divide potatoes, green beans and meatballs between plates.
  • Serve blueberry-BBQ sauce alongside.

If you've opted for RTE meatballs, skip the instructions to form the meatballs. Cook in the same way the recipe instructs you to cook the regular portion of meatballs. Reserve green onions, breadcrumbs and garlic salt for another use.

Sprinkle potatoes with cheese and let stand for 2 min before serving.
