Cooking Steps

Start prep

  • Before starting, preheat the broiler to high. Bring a large pot of salted water to a boil over high (use same for 4 servings). Wash and dry all produce.
  • Thinly slice celery into 1/4-inch half-moons. 
  • Core, then cut pepper into 1/4-inch pieces. 
  • Roughly chop carrots into smaller pieces. 
  • Finely chop dill. 
Prep chicken

  • Pat chicken dry with paper towels. 
  • Carefully slice into the centre of each chicken breast, parallel to the cutting board, leaving 1/2 inch intact on the other end. Open up chicken like a book.
  • Season both sides with Applewood Smoke Spice, salt and pepper. 
Cook pasta

  • To the boiling water, add fusilli.
  • Cook for 12-14 min, until tender but still firm to the bite.
  • Strain, then rinse fusilli under cold water. 
  • Return fusilli to the pot, off heat. 
Cook chicken

  • Meanwhile, heat a large non-stick pan over medium.
  • When the pan hot, add 1 tbsp (2 tbsp) oil, then chicken. Cook for 2-3 min per side, until golden.
  • Transfer chicken to a foil-lined baking sheet. Brush half the BBQ sauce over the tops of chicken. 
  • Broil in the middle of the oven for 4-5 min, until chicken is cooked through.** 
Toss pasta salad

  • To the pot with fusilli, add mayo, dill, vinegar, carrots, peppers, celery, 1/4 tsp (1/2 tsp) salt and 1/4 tsp (1/2 tsp) sugar. 
  • Season with pepper, then stir to coat. 
Finish and serve

  • Divide chicken and pasta salad between plates. 
  • Serve remaining BBQ sauce on the side for dipping.
