Cooking Steps

Cook rice

  • Before starting, preheat the broiler to high. Wash and dry all produce.
  • To a medium pot, add 1 1/4 cups (2 1/2 cups) water, stock powder and half the Dill-Garlic Spice Blend. Cover and bring to a boil over high.
  • Using a strainer, rinse rice until water runs clear.
  • To the boiling water, stir in rice, then reduce heat to low. Cover and cook for 13-15 min, until rice is tender and water is absorbed.
  • Remove from heat. Set aside, still covered.
Cook chicken

  • Meanwhile, line a baking sheet with aluminum foil.
  • Heat a large non-stick pan over medium. 
  • While the pan heats, pat chicken dry with paper towels. Season with Applewood Smoke Spice, salt and pepper.
  • When the pan is hot, add 1 tbsp (2 tbsp) oil, then chicken. Cook for 1-3 min per side, until golden. Transfer chicken to the prepared baking sheet. Spread half the apricot spread over top.
  • Broil in the middle of the oven for 4-8 min, until cooked through.**
Prep and make slaw

  • While chicken cooks, thinly slice cucumber. 
  • Thinly slice green onions.
  • To a large bowl, add coleslaw cabbage mix, cucumbers, half the green onions, sour cream, vinegar, remaining Dill-Garlic Spice Blend and 1/4 tsp (1/2 tsp) sugar. Season with salt and pepper. Toss to coat.
Finish and serve

  • When chiken is done, spread remaining apricot spread over top.
  • Fluff rice with a fork. Stir in remaining green onions.
  • Divide rice, slaw and chicken between plates.
  • Squeeze chili-garlic sauce over top.
