Instructions

  • Strip sage leaves from stems and finely chop.
  • Strip thyme from stems and finely chop.
  • Cut the butter into 1 tbsp portions.
  • Remove plastic from turkey roll, then pat turkey dry with paper towels.
  • Place turkey roll in a 9x13-inch baking dish or roasting pan. (NOTE: DO NOT use a glass or Pyrex dish to roast the turkey!)
  • Sprinkle turkey with 1 tbsp sage, 1/2 tbsp thyme, half the Chicken Salt and season with pepper.

  • Cover turkey with foil.
  • Roast in the middle of the oven until golden-brown and cooked through, 3 hrs.**

  • Meanwhile, in a small microwaveable bowl, melt 2 tbsp butter.
  • When there is 30 min of cook time left, remove foil, add 1 cup water to the baking dish or roasting pan and brush butter over turkey.
  • Return to the oven and cook uncovered for the remaining 20 min.

  • When turkey is cooked through, carefully transfer to a cutting board.
  • Cover with foil and let rest for 20 min.
  • Reserve turkey juices in the baking dish to be used for Turkey and Thyme Gravy with Drippings.
  • After 20 min, remove netting and carve turkey into 1/4-inch-thick slices.
  • Transfer turkey to a serving platter.
