Cooking Steps

Prep

  • Before starting, wash and dry all produce.
  • Thinly slice green onions, keeping greens and whites separate.
  • Thinly slice mushrooms.
  • Cut bok choy into 1/2-inch pieces. (Rinse bok choy leaves to wash away any dirt.)
Cook beef and mushrooms

  • Heat a large pot over medium-high.
  • When hot, add 1/2 tbsp (1 tbsp) oil, beef, mushrooms, green onion whites and brown sugar. Season with salt and pepper. Cook, for 4-6 min, stirring often, until veggies are tender and beef is cooked through.**
  • Add soy-mirin blend. Cook for 30 sec, stirring often, until fragrant.
Make broth and cook noodles

  • Add stock powder and 3 cups (7 cups) water. Bring to a boil over high.
  • Meanwhile, using hands, separate noodles and shake off any excess starch.
  • Once broth is boiling, add carrots, bok choy and noodles.
  • Cook for 2-3 min, stirring often, until noodles and veggies are tender.

  • Divide noodles and broth between bowls.
  • Sprinkle crispy shallots and remaining green onions over top.
