Cooking Steps

Cook rice

  • Before starting, add 1 1/2 cups (3 cups) water and 1/2 tsp (1 tsp) salt to a medium pot. Cover and bring to a boil over high.
    Wash and dry all produce.
  • Using a strainer, rinse rice until water runs clear.
  • To the boiling water, stir in rice and carrots, then reduce heat to low. Cover and cook for 13-15 min, until rice is tender and water is absorbed. Remove from heat. Set aside, still covered.
  • Preheat the air fryer to 400°F.

  • In a small bowl, combine sweet chili sauce and soy sauce.
  • Cut any large broccoli into bite sized pieces. To a large bowl, add broccoli, 1/2 tbsp (1 tbsp) oil and 2 tbsp water (use the same for 4 servings). Season with salt and pepper. Toss to coat.
  • Thinly slice green onions. 
  • Pat chicken dry with paper towels. Cut into 1-inch pieces. 
Cook broccoli and chicken

  • Place broccoli in the air fryer basket.
  • To the bowl used to season broccoli, add chicken, 1/2 tbsp (1 tbsp) oil and cornstarch. Season with salt and pepper. Toss to coat. Stir in half the sweet chili sauce mixture.
  • Arrange chicken in a single layer over broccoli.
  • Air-fry chicken and broccoli for 7-10 min, stirring halfway, until broccoli is tender-crisp, and chicken is cooked through.** (NOTE: Don't crowd the basket, cook in 2 batches if needed.) 
  • Meanwhile, to the remaining sauce, stir in 1 tbsp (2 tbsp) water.
Finish and serve

  • Fluf rice with a fork. Stir in half the green onions and half the crispy shallots
  • Divide rice between bowls. 
  • Top with broccoli and chicken. 
  • Drizzle remaining sauce over top.
  • Sprinkle remaining green onions and remaining crispy shallots over top.

if you've opted to get chicken thighs, pat chicken dry with paper towels. Cut into 1-inch pieces.  Cook chicken thighs in the same way the recipe instructs you to cook the diced chicken.
