Peel, then cut carrots into 1/2-inch matchsticks. Core, then cut pepper into 1/2-inch slices. Roughly chop parsley. Peel, then mince or grate garlic. Add garlic, half the parsley, half the garlic salt and 1 tbsp oil to a small bowl. Season with pepper, then stir together.
Add pita wedges to a baking sheet. Drizzle with garlic oil, then toss to coat and arrange in a single layer. Bake in the top of the oven, until golden and crisp, 5-6 min.
Add yogurt, remaining garlic salt and remaining parsley to a medium bowl. Season with pepper, then stir together.
Transfer yogurt dip to a serving bowl, if desired. Arrange herby yogurt dip, pita crisps, carrots and peppers on a serving platter.
