Cooking Steps

Roast potato wedges

  • Before starting, preheat the oven to 450˚F. Wash and dry all produce.
  • Remove any brown spots from potatoes, then cut potatoes into 1/2-inch wedges.
  • To a parchment-lined baking sheet, add potatoes, half the Applewood Smoke Spice and 1 tbsp oil. (NOTE: For 4 servings, use 2 baking sheets, with 1 tbsp oil per sheet.) Season with salt and pepper. Toss to coat.
  • Roast in the middle of the oven for 25-28 min, flipping halfway through, until tender and golden. (NOTE: For 4 servings, roast in the top and middle of the oven, rotating sheets halfway through.)
Make ranch

  • Meanwhile, peel, then mince or grate garlic.
  • Thinly slice chives. 
  • In a medium bowl, whisk together cream cheese and vinegar. Add garlic, chives, Dill-Garlic Spice Blend and mayo. Season with salt and pepper. Whisk to combine.
Cook chicken

  • Heat a large non-stick pan over medium-high.
  • While the pan heats, pat chicken dry with paper towels. Season with remaining Applewood Smoke Spice, salt and pepper.
  • When the pan is hot, add 1 tbsp (2 tbsp) oil, then chicken. Pan-fry 1-2  min per side, until golden, then transfer chicken to a parchment-lined baking sheet.
  • Spread 1/2 tbsp BBQ sauce over each piece of chicken.
  • Roast in the bottom of the oven for10-14 min, until cooked through.**
Finish prep and make slaw

  • While chicken cooks, thinly slice cucumbers. 
  • To a large bowl, add coleslaw cabbage mix, cucumbers, half the ranch and 1/4 tsp (1/2 tsp) sugar. Season with salt and pepper. Stir to coat.
Finish and serve

  • Divide potatoes, chicken and slaw between plates.
  • Serve remaining ranch and remaining BBQ sauce alongside for dipping.
