Cooking Steps

  • Before starting, preheat the broiler to high.
    Wash and dry all produce.
  • To a medium pot, add 1 1/4 cup (2 1/2 cups) water and 1/8 tsp (1/4 tsp) salt. Cover and bring to a boil over high. 
  • Using a strainer, rinse rice until water runs clear.
  • To the boiling water, add rice. Stir to mix, then reduce heat to low. Cover and cook for 13-15 min, until rice is tender and water is absorbed. Remove from heat. Set aside, still covered.

  • Meanwhile, cut cucumber into 1/4-inch half moons. 
  • Cut radishes into 1/4-inch matchsticks. 
  • Thinly slice green onions. 
  • To a large bowl, whisk together vinegar, sesame oil, 2 tsp (4 tsp) soy mirin blend and 1/4 tsp (1/2 tsp) sugar. Set aside. 
  • To a small bowl, add remaining soy-mirin blend and 2 tsp (4 tsp) sugar. Whisk to combine, then set aside.

  • Line a baking sheet with foil.
  • Pat tilapia dry with paper towels, pressing well to absorb as much moisture as possible. Season with salt and pepper.
  • Arrange tilapia on the baking sheet in a single layer. Brush over soy mirin sugar muixture. Broil for 6-10 min, in the middle of the oven, until cooked through.** (TK: No time in style guide, test for timing)

  • Meanwhile, add spring mix, radishes and cucumbers to the large bowl with dressing. Toss to combine, then season with salt and pepper.

  • Fluff rice with a fork and stir in half the green onions. 
  • Divide rice and salad between bowls.
  • Top with rice with fish. 
  • Sprinkle over remaining green onions.
