Cooking Steps

Cook chorizo mixture

  • Heat a large non-stick pan over medium-high.
  • While the pan heats, core, then cut peppers into 1/2-inch pieces.
  • When the pan is hot, add 1/2 tbsp (1 tbsp) oil, then chorizo, onions and half the peppers. Cook for 4-5 min, breaking up chorizo into smaller pieces, until no pink remains.**
Season chorizo mixture

  • Add 2 tbsp (4 tbsp) water to chorizo mixture, then season with salt, pepper and Smoked Paprika-Garlic Blend. Cook for 1 min, until water evaporates. 
  • Remove from heat.
Assemble flatbreads

  • On an unlined baking sheet, arrange flatbreads.
  • Top flatbreads with chorizo mixture, then sprinkle with cheese.
  • Broil flatbreads for 3-4 min in the middle of the oven, until golden and cheese is melted. (NOTE: For 4 servings, broil flatbreads in the middle of the oven one baking sheet at a time.) (TIP: Keep an eye on them so they don't burn!)
Finish and serve

  • In a small bowl, combine chili-garlic sauce and half the honey. Whisk to combine. (This is your hot honey!)
  • In a large bowl, whisk together vinegar, remaining honey and 1 tbsp (2 tbsp) oil. Season with salt and pepper.
  • Add spinach and remaining peppers to the bowl with dressing, then toss to coat.
  • Cut flatbreads into quarters, then divide between plates.
    (TIP: Top flatbreads with some dressed salad greens, if you like.)
  • Drizzle hot honey over top.
