Cooking Steps

Prep and make dressing

  • Before starting, preheat the oven to 425 °F.
  • Wash and dry all produce.
  • Mince or grate garlic.
  • Juice half the lemon. Cut remaining lemon into wedges.
  • In a large bowl, stir together tahini, 1 tbsp (2 tbsp) oil, 1 tbsp (2 tbsp) lemon juice, 1/4 tsp (1/2 tsp) salt, 1/2 tsp (1 tsp) sugar and garlic.
Toast flatbreads

  • Cut flatbreads into 1-inch pieces.
  • On a parchment-lined baking sheet, add flatbread pieces and 1 tbsp (2 tbsp) oil. Season with half (all for 4 ppl) the Shawarma Spice Blend and pepper, then toss to coat.
  • Bake in the top of the oven for 7-9 min, until golden and crispy.
Pan-fry halloumi

  • In a large non-stick pan, heat 1 tbsp oil over medium-high. 
  • Cut halloumi into 3/4-inch cubes, then rinse and pat dry with paper towels. 
  • Add halloumi to pan. (NOTE: Cook in batches for 4 servings, using 1 tbsp oil per batch.) Cook for 3-4 min, turning occasionally, until golden. Remove pan from heat.
Prep salad

  • Cut tomato into 1/2-inch pieces.
  • Thinly slice green onions.
  • Core, then cut pepper into 1/2-inch pieces.
  • Cut cucumber in half lengthwise, then chop into 1/2-inch pieces.
  • Roughly chop parsley.
  • Remove and discard outer layer of lettuce. Remove stem. Cut lettuce into quarters, then chop into 1/2-inch pieces.
Mix salad

  • To the bowl with dressing, add tomatoes, green onions, peppers, cucumber, lettuce and half the parsley. Toss to combine.
  • Add crispy flatbread pieces and toss again. Season with salt and pepper.
Finish and serve

  • Divide salad evenly between plates. Top with halloumi.
  • Sprinkle remaining parsley over top.
  • Serve with a lemon wedge.
