Cooking Steps

Roast cauliflower

  • Before starting, preheat the oven to 450°F.
  • Wash and dry all produce.
  • Cut cauliflower into bite-sized pieces. 
  • To a parchment-lined baking sheet, add cauliflower, 1/2 tsp (1 tsp) garlic salt and 1 tbsp (2 tbsp) oil. Season with pepper, then toss to combine. Roast in the middle of the oven for 7-8 min, until beginning to soften. 
Prep and make patties

  • Meanwhile, to a small bowl, add cheddar cheese and half the breadcrumbs. Stir to combine. Set aside.
  • To a medium bowl, add beef, remaining breadcrumbs and remaining garlic salt. Season with pepper, then combine.
  • Form mixture into 2 (4) 4-inch-wide patties. 
Cook patties

  • In a large non-stick pan, heat 1 tsp (2 tsp) oil over medium-high.
  • When hot, add patties. Cook for 3-5 min per side, until cooked through.** (NOTE: Don't crowd the pan; cook patties in 2 batches for 4 servings, using 1 tsp oil per batch.)
  • Transfer patties to another medium bowl. Pour BBQ sauce over top, then gently toss to coat. Cover to keep warm.
  • Meanwhile, flip cauliflower and sprinkle breadcrumb-cheese mixture over top. Roast in the middle of the oven for 7-8 min, until cauliflower is tender and cheese is melted.
Toast buns

  • Halve buns.
  • On another parchment-lined baking sheet, arrange buns, cut-side up.
  • Toast buns in the top of the oven for 3-4 min, until golden. (TIP: Keep an eye on them so they don't burn!)
Finish and serve

  • Spread mayo over cut sides of buns.
  • Top each bottom bun with BBQ beef patties. Drizzle over any remaining sauce from the bowl. 
  • Top with spring mix and close with top bun. 
  • Divide burgers and cheesy cauliflower between plates.
