Cooking Steps

1
  • Lightly coat dough with oil. Using oiled hands, stretch into a rough oval shape on a parchment-lined baking sheet. (NOTE: For 4 servings, use 2 parchment-lined baking sheets.)
  • Let dough rest in a warm place for 8-10 min.

2
  • Meanwhile, thinly slice mushrooms.
  • Halve tomatoes.
  • Roughly chop half the spinach.
  • To a medium bowl, add cream cheese, ricotta cheese, half of the garlic salt, 1/4 tsp (1/2 tsp) chili flakes. Season with pepper and stir to combine.
3
  • With oiled hands, stretch dough again into a large oval shape. (NOTE: Dough should now hold its shape.)
  • Spread ricotta-mixture over dough.
  • Top with chopped spinach, mozzarella, mushrooms, then half the Parmesan.
  • Season with 1/4 tsp (1/2 tsp) garlic salt and pepper.
  • Bake pizza in the middle of the oven for 14-18 min, until golden and crisp. (NOTE: For 4 portions, bake pizzas in the middle and top of the oven, rotating sheets halfway through.)
4
  • To a large bowl, add balsamic and 1/2 tbsp (1 tbsp) oil.
  • Add remaining garlic salt and pepper, then whisk to combine.
  • Add remaining spinach and tomatoes, then toss to combine.
  • Set aside.
5
  • When pizza is done, let sit for 2-3 min.
  • Cut pizza into slices. (TIP: Sprinkle over some extra chili flakes for extra kick!)
  • Divide pizza and salad between plates.
  • Sprinkle remaining Parmesan over salad.
