  • Add stock powder, 1 1/4 cups (2 1/2 cups) water, and 1 tbsp (2 tbsp) butter to a medium pot. Cover and bring to a boil over high heat.
  • Once boiling, add rice, then reduce heat to low. Cover and cook until rice is tender and liquid is absorbed, 16-18 min.
  • Remove from heat. Set aside, still covered.
  • Peel, then halve carrot lengthwise. Cut into 1/4-inch half-moons.
  • Cut any large broccoli florets into bite sized pieces.
  • Heat a large non-stick pan over medium-high heat.
  • While pan heats, pat pork chops dry with paper towels. Season with half the Zesty Garlic Blend, salt and pepper.
  • When hot, add 1/2 tbsp (1 tbsp) oil, then pork. Pan-fry until golden, 2-3 min per side, then transfer pork to a foil-lined baking sheet.
  • Spread fig spread over pork chops.
  • Broil in the middle of the oven until lightly charred/ sticky and cooked through, 6-7 min.**
  • Reheat the same pan over medium.
  • Add 1 tbsp (2 tbsp) butter. Swirl pan until melted, 30 sec.
  • Add carrots, broccoli, remaining Zesty Garlic Spice Blend and 1/3 cup (1/2 cup) water. Season with salt and pepper?
  • Cook stirring often until liquid absorbs and veggies are tender-crisp, 4-5 min.
  • Slice vs unsliced pork
  • Fluff rice with a fork.
  • Divide rice, fork and veggies between plates.
  • Sprinkle feta over rice and pork.
