Cooking Steps

Cook rice

  • Before starting, wash and dry all produce.
  • To a medium pot, add 1 1/2 cups (3 cups) water and 1/8 tsp (1/4 tsp) salt. Cover and bring to a boil over high.
  • Using a strainer, quickly rinse rice.
  • To the boiling water, stir in rice and reduce heat to low. Cover and cook for 15-17 min, until rice is tender and water is absorbed. Remove from heat. Set aside, still covered.
  • To a small pot, add 3 cups (6 cups) warm water. Bring to a boil over high.

  • Once the small pot of water is boiling, reduce heat to medium-high. Using a spoon, lower egg into the boiling water. Cook for 7 min for runny yolk or 9 min for set yolk.**
  • Drain and rinse egg under cold water for 30 sec, until cool enough to peel.
  • Peel, then halve egg. Season with salt and pepper.
Finish prep and make DIY chili-crisp

  • Meanwhile, peel, then mince ginger.
  • Peel, then halve carrot lengthwise. Cut into 1/4-inch matchsticks.
  • Thinly slice green onion, keeping white and green parts separate. 
  • To a small bowl, add half the peanuts (use all for 4 servings), 1 tbsp (2 tbsp) oil, 1/4 tsp (1/2 tsp) chili flakes, half the rice vinegar (use all for 4 servings), 1/8 tsp (1/4 tsp) sugar, half the sesame oil, soy sauce and half the ginger. Stir to combine.
Cook turkey

  • Heat a large non-stick pan over medium.
  • When the pan is hot, add 1 tbsp (2 tbsp) oil, then turkey and green onion whites.
  • Cook for 3-5 min, breaking up turkey into smaller pieces, until no pink remains.**
  • To the pan, add remaining ginger, beef stock powder, cabbage, carrots and 2 tbsp (1/4 cup) water. Cook covered for 1-2 min, stirring occasionally, until veggies are tender crisp. Season with pepper.
Finish and serve

  • To the rice, add half of the remaining green onions and remaining sesame oil. Season with salt. Fluff with fork.
  • Divide rice, veggies and turkey between bowls. 
  • Top each bowl with half an egg and DIY chili-crisp.
  • Sprinkle remaining green onions over top.

If you've opted to get turkey, add 1 tbsp (2 tbsp) oil to the pan, then add turkey and green onion whites. Cook in the same way the recipe instructs you to cook the beef.** Disregard instructions to drain excess fat.
