Before starting, preheat the oven to 350ºF. Clear a flat space in the freezer to allow for an 8x8-inch baking dish. Meanwhile, grease an 8x8-inch metal baking dish with 1 tsp softened butter.Melt 8 tbsp butter the microwave or small pot. Add 3/4 cup brown sugar and melted butter to a large bowl, then whisk to combine. Add egg, 1/2 tsp baking powder and 1/4 tsp salt, then whisk until smooth.
Add graham cracker crumbs and 3/4 cup flour to the bowl with the butter mixture, then stir with a spatula until combined. Transfer graham cracker mixture to the prepared baking dish and spread into an even layer using a spatula. Bake until lightly golden and a toothpick inserted into the centre comes out clean, 18-20 min. Remove baking dish from the oven and immediately sprinkle chocolate chips over top. Return baking dish to the oven until chocolate chips have melted, 2-3 min.
Spread melted chocolate evenly over graham cracker base using a spatula or back of a spoon. Preheat the oven to broil.Scatter marshmallows over top in an even layer. Broil in the middle of the oven until marshmallows are golden, 2-3 min. (NOTE: Keep an eye on the marshmallows so they don't burn!)
Transfer baking dish to a wire rack and allow s'mores bars to cool slightly, 5 min. Transfer baking dish to the freezer until chocolate has hardened, 10-15 min.Remove baking dish from the freezer and cut bars into 16 pieces using a greased knife. (TIP: Wipe down knife with hot water between slices to get clean cuts!)
