Cooking Steps

Cook rice noodles

  • Before starting, bring a large pot of salted water to a boil over high.
  • Wash and dry all produce.
  • To the boiling water, add rice noodles. Cook for 10-12 min, stirring occasionally, until tender but still slightly chewy to the bite.
  • Reserve 1/4 cup (1/2 cup) noodle water, then drain rice noodles and rinse under warm water until slightly cool.
  • Return to the pot, off heat.
Prep and make sauce

  • Meanwhile, cut bok choy into 1-inch pieces. Rinse bok choy leaves to wash away any dirt.
  • Core, then cut pepper into 1/2-inch pieces.
  • Peel, then mince or grate garlic.
  • In a medium bowl, whisk together sweet chili sauce, peanut butter, soy sauce, chili-garlic sauce and reserved pasta water.
Toast peanuts

  • Heat a large non-stick pan over medium. 
  • When hot, add peanuts to the dry pan. Toast for 4-5 min, stirring often, until golden. (TIP: Keep your eye on them so they don't burn!)
  • Transfer to a plate.
Cook Impossible® Burger Patties and make spicy mayo

  • Reheat the same pan over medium. Add 1/2 tbsp (1 tbsp) oil, then Impossible® Burger Patties and garlic.
  • Cook for 5-6 min, breaking up patties into smaller pieces, until crispy.** Season with salt and pepper.
  • Meanwhile, in a small bowl combine spicy mayo and 1 tbsp (2 tbsp) water.
Assemble stir-fry

  • To the pan with Impossible® Burger Patties, add peppers and bok choy. Cook for 2-4 min, stirring often, until veggies are tender-crisp.
  • Add noodles and sauce. Cook for 2-4 min, stirring often, until sauce thickens slightly and coats noodles.
  • Season with salt and pepper.
Finish and serve

  • Divide spicy Impossible® Burger Patties and peanut dragon noodles between bowls. 
  • Drizzle spicy mayo over top.
  • Sprinkle with peanuts.
