Instructions

  • Add 3 cups (6 cups) warm water to a small pot. Bring to a boil over high heat.
  • Once water is boiling, reduce heat to medium-high. Using a spoon, lower egg into the boiling water. Cook for 7 min for a runny yolk or 9 min for a set yolk.**
  • Drain and rinse egg under cold water for 30 sec, until cool enough to peel.
  • Peel eggs. Set aside.

  • Cut bok choy into 1/2-inch pieces. Rinse bok choy leaves to wash away any dirt.
  • Thinly slice green onion.

  • Heat a medium pot over medium-high heat. When hot, add 1 tbsp (2 tbsp) oil, then pork and onions. Cook for 4-5 min, breaking up pork into smaller pieces, until no pink remains.** Season with salt and pepper.
  • Meanwhile, bring a large pot of salted water to a boil over high.

  • Add ginger-garlic puree. Cook for 1 min, stirring often, or until fragrant.
  • Add Dal Spice Blend and Gravy Spice Blend. Cook for 1 min, stirring often, until toasted.
  • Add bok choy, broth concentrate, soy sauce mirin blend and 1 1/2 cups (3 cups) water. Bring to simmer over high. [tester pls confirm water amount]
  • Reduce heat to medium-low. Cook for 2-3 min or until bok choy is tender-crisp and broth thickens slightly.

  • To the boiling water, add ramen noodles. Cook uncovered for 1 - 2 min, until tender.
  • Drain noodles, then rinse under warm water.
  • Return noodles to the same pot, off heat.

  • Slice eggs in half, lengthwise.
  • Divide ramen and curry pork broth between bowls. 
  • Top with egg halves and remaining green onions.
