Instructions

Prep and grill corn

  • Brush each cob with 1/2 tbsp oil.
  • Add corn to the grill. Close lid and grill, turning occasionally, until corn is tender and grill marks form, 8-10 min.
  • Season with salt and pepper.
Finish prep

  • Meanwhile, halve tomatoes.
  • Thinly slice green onions. 
  • Zest, then juice lime.
  • Roughly chop cilantro.
Make spicy honey-chipotle dressing

  • Add honey, lime juice, lime zest and chipotle sauce to a small bowl, then whisk to combine. 
Finish and serve

  • Carefully shave corn kernels off cobs by moving the knife in a downward motion.
  • Add corn, tomatoes, green onions, feta and half the cilantro to a large bowl. Season with salt and pepper, then toss to combine. 
  • Divide grilled corn salad between plates, then drizzle spicy honey-chipotle dressing over top. Sprinkle with remaining cilantro.
