Cooking Steps

Prep

  • Wash and dry all produce.
  • Zest, then juice half the lime. Cut remaining lime into wedges.
  • Peel, then cut shallot into 1/8-inch pieces.
  • Strain pineapple, reserving juice.
Cook Impossible® Burger Patties

  • In a large non-stick pan, heat 1/2 tbsp (1 tbsp) oil over medium-high. When the pan is hot, add Impossible® Burger Patties and half the shallots. Cook for 5-6 min, breaking up patties into smaller pieces, until crispy.** 
  • Add Caribbean Spice Blend and 2 tbsp (4 tbsp) water. Cook for 1-2 min, stirring often, until fragrant. Season with salt and pepper.
Make coleslaw and pineapple salsa

  • Meanwhile, to a large bowl, add mayo, half the lime zest and half the lime juice. Stir to combine. Season with salt and pepper.
  • Add coleslaw cabbage mix. Stir to combine. 
  • To a small bowl, add pineapple, remaining shallots, remaining lime zest and remaining lime juice. Season with salt and pepper, then stir to combine.
Make sauce and warm tortillas

  • To a small bowl, add jerk sauce, 1/8 tsp (1/4 tsp) pepper and 2 tbsp (4 tbsp) pineapple juice. Stir to combine.
  • Wrap tortillas in paper towels. Microwave for 30 sec-1 min, until tortillas are warm and flexible. (TIP: You can skip this step if you don't want to warm the tortillas!)
Finish and serve

  • Divide tortillas between plates and top with Impossible® mixture. Spoon jerk sauce over top.
  • Divide coleslaw and pineapple salsa between tortillas.
  • Squeeze a lime wedge over top.

If you've opted to get Impossible®, cook for 5-6 min, in the same way as the beef, breaking up patties into smaller pieces, until crispy.** Disregard instructions to drain excess fat.
