Cooking Steps

Cook linguine

  • Before starting, add 10 cups water and 2 tsp salt to a large pot (use same for 4 servings). Cover and bring to a boil over high heat.
  • Wash and dry all produce.
  • To the boiling water, add linguine. Cook 10-12 min, uncovered, stirring occasionally, until tender. Reserve 1/2 cup (1 cup) pasta water.
  • Drain and return linguine to the same pot, off heat.
Prep and cook Beyond Meat®

  • Meanwhile, roughly chop mushrooms into 1/2-inch pieces.
  • Heat a large non-stick pan over medium-high.
  • When the pan is hot, add 1/2 tbsp (1 tbsp) oil, then Beyond Meat®.
  • Cook 5-6 min, breaking up patties into smaller pieces, until crispy.** 
  • Season with salt and pepper.
Cook veggies and make ragu

  • To the pan with Beyond Meat®, add mushrooms and mirepoix
  • Cook 4-6 min, stirring occasionally, until tender. Season with salt and pepper. 
  • Add Italian Herb Spice Blend, garlic puree and tomato sauce base. Cook 1-2 min, stirring often, until fragrant. 
  • Reduce heat to medium.
  • Add crushed tomatoes, broth concentrate and 1/3 cup (2/3 cup) pasta water
  • Cook 4-5 min, stirring occasionally, until ragu thickens slightly. Season with salt and pepper. 
Finish linguine

  • To the pot with linguine, add ragu and 1 tbsp (2 tbsp) butter, then toss to combine.
  • Season with salt and pepper.
Finish and serve

  • Divide Beyond Meat® ragu with linguine between plates. 
  • Sprinkle Parmesan over top.
