Cooking Steps

  • Add cavatappi to the boiling water. Cook uncovered, stirring occasionally, until tender, 10-12 min. Reserve 1/2 cup pasta water (double for 4 ppl). Drain, then return to same pot. Set aside covered, off heat.

  • While pasta cooks, peel, then mince or grate garlic. Using a strainer, drain and rinse shrimp, then pat dry with paper towels.

  • Toss shrimp with Cajun Spice and 1/2 tbsp oil (dbl for 4 ppl) on a baking sheet. Season with salt and pepper. Broil in the middle of the oven, until shrimp just turns pink, 5-6 min.**

  • While the shrimp broil, heat a medium pot over medium heat. When hot, add butter and garlic, stirring often until fragrant, 1-2 min. When butter begins to froth, add in flour, stirring frequently until light golden brown in colour, 1-2 min. Slowly add in reserved pasta water, then milk, whisking constantly to ensure there are no clumps. Remove from heat, and stir in cheese until fully melted. Season with salt and pepper. Set aside.

  • Add the cooked shrimp, spinach, and cheese sauce to the large pot with the cooked cavatappi. Stir to combine. Transfer to an 8x8-inch baking dish (9x13-inch for 4 ppl). Sprinkle panko overtop. Broil in middle of oven, until panko is golden brown, 2-4 min. (TIP: Keep your eye on it, so it doesn't burn!)

  • When panko is golden brown, remove from oven and let set 2-4 min. Divide between plates.
