Peel, then cut carrots in half lengthwise. Cut into 1/2-inch thick half-moons.
Add carrots, maple syrup, 2/3 cup water, 1 tbsp butter and 1/4 tsp salt to a cold large non-stick pan. Stir together and bring to a simmer over medium-high heat. Cook, stirring often, until carrots are tender and liquid is absorbed, 12-15 min.
Remove pan from heat. Stir in the remaining parsley. Season with salt and pepper. Transfer carrots to a serving platter or bowl.
