Instructions

  • Cut potatoes into 1/4-inch rounds.
  • Add potatoes and 2 1/2 tbsp oil to a parchment-lined baking sheet. Season with garlic salt and pepper, then toss to coat.
  • Roast in the bottom of the oven, flipping halfway through, until tender and golden-brown, 28-30 min.

  • Meanwhile, thinly slice green onions.
  • Cut bacon into 1/4-inch pieces. (TIP: Use kitchen shears to cut bacon with ease!)
  • Heat a medium non-stick pan over medium heat.
  • When hot, add bacon. Cook, flipping occasionally, until crispy, 7-8 min.**
  • Remove the pan from heat. Using a slotted spoon, transfer bacon to a paper towel-lined plate. Set aside.

  • When potatoes are done, remove from the oven, then sprinkle cheese over top.
  • Return to the middle of the oven and roast until cheese melts, 1-2 min.

  • Combine sour cream and 2 tsp water in a small bowl.
  • Drizzle sour cream over potatoes, then sprinkle bacon and green onions over top.
  • Serve loaded baked potato bites directly on the baking sheet.
