Cooking Steps

Prep

  • Before starting, wash and dry all produce.
  • Slice radishes into 1/4-inch rounds.
  • Cut brie into 1/2-inch pieces.
  • Core, then cut apple into 1/4-inch wedges.
  • Cut buns into 1-inch pieces. To a medium bowl, add ciabatta and 1 tbsp (2 tbsp) oil. Season with salt and pepper, then toss to coat.
Toast walnuts and ciabatta

  • Heat a large non-stick pan over medium-high.
  • When hot, add walnuts to the dry pan. Toast for 2-4 min, stirring often, until golden. (TIP: Keep your eye on walnuts so they don't burn.) 
  • Transfer to a plate.
  • Reheat a large non-stick pan over medium. When hot, add ciabatta. Cook for 1-2 min, stirring occasionally, until browned on all sides. Transfer to a plate.
Make dressing

  • To a large bowl, add honey, blueberry jam, vinegar and 1 1/2 tbsp (3 tbsp) oil.
  • Season with salt and pepper, then whisk to combine. Set aside.
Toss salad

  • To the large bowl with dressing, add radishes, apples, spring mix and ciabatta.
  • Toss to combine.
Finish salad

  • Divide salad between bowls.
  • Top with brie, toasted walnuts and crispy garlic.
