You won't believe its not meat! Our creation for dinner tonight is the Beyond Meat taco. Tender beans, smoky seasoning, flavourful tortillas and crisp chunks of beyond meat. Enjoy each bite of this beyond taco, perfect for all seasons!

Core, then finely chop peppers. Roughly chop cilantro. Zest, then juice the lime. Quarter tomatoes. Drain and rinse beans. Peel, then mince or grate garlic.
Heat a large non-stick pan over medium-high heat. When the pan is hot, add 1 tbsp oil (dbl for 4 ppl) then onions. Cook, stirring occasionally, until soften, 3-4 min. Add Beyond Meat, garlic and Mexican seasoning. Cook, breaking up Beyond Meat into smaller pieces, until crispy, 4-5 min.
To the Beyond Meat, add beans. Cook, stirring often, until warmed through, 2-3 min. Season with salt and pepper. Set aside.
While Beyond Meat cooks, in a medium bowl, combine peppers, tomatoes, lime juice, cilantro and 1 tbsp oil (dbl for 4 ppl). Season with salt and pepper. In a small bowl, stir together sour cream and lime zest. Season with salt and pepper.
Wrap tortillas in paper towels. Microwave, until tortillas are warm and flexible, 30 sec - 1 min.
Divide Beyond Meat and bean mixture between tortillas. Top with crema and salsa. Divide tacos between plates.
