Cooking Steps

  • Before starting, preheat the oven to 350F.
  • In a small microwave safe bowl, add 5 tbsp butter. Microwave until melted. 
  • To a medium bowl, add flour, cocoa powder and 1/4 tsp salt, then whisk to combine. Add melted butter and brown sugar, then mix until a crumbly dough forms. 
  • Transfer dough to a 8-inch cake pan or 8x8-inch square pan. Pat dough into the bottom of the dish. (TIP: Use a flat-bottomed measuring cup or glass to help smooth down the bottom.)
  • Bake in the bottom of the oven for 8-10 minutes until dry to the touch.

  • Meanwhile, to a large microwave-safe bowl, add cream cheese. Microwave for 20-30 sec until softened.
  • Add 0.5 cup sugar to the bowl with the cream cheese, then beat using an electric hand mixer for 1 min until smooth. Add egg, then beat until smooth. Beat in sour cream.
  • Remove crust from the oven.

  • Pour cheesecake mixture over crust then bake in the middle of the oven for 20-22 min until set.
  • Transfer cheesecake to the freezer to cool, 30 min.
  • Once cheesecake is completely cool, to a small pot over medium heat, add heavy cream, chocolate chips, half the honey and 1/8 tsp salt.

  • Heat, stirring occasionally for 2-3 min until chocolate has melted and mixture is smooth and glossy.
  • Immediately pour ganache over cooled cheesecake and spread across the surface using the back of a spoon or spatula. Sprinkle flaky salt over top, if desired.
  • Transfer cheesecake to the fridge 2 hr until set. 
  • To serve, cut cheesecake into slices using a sharp knife dipped in hot water.
