These hearty, applewood-spiced Beyond Meat® bowls feature a flavourful mix of peppers and onions served over a bed of fluffy rice. Each bowl is topped with a drizzle of tangy BBQ sauce and crispy shallots for added crunch.

Cooking Steps

Cook rice

  • In a medium pot, bring 1 cup (2 cups) water and 1/8 tsp (1/4 tsp) salt to a boil over high heat. Wash and dry all produce.
  • Using a strainer, rinse rice until water runs clear.
  • Once water is boiling, add rice and broth concentrate, then reduce heat to low. 
  • Cover and cook for 12-14 min, until rice is tender and liquid is absorbed.
  • Remove from heat. Set aside, still covered.
Prep veggies

  • Meanwhile, core and chop pepper into 1/2-inch pieces. 
  • Thinly slice green onions. 
Cook Beyond Meat® and veggies

  • Heat a large non-stick pan over medium-high. When hot, add 1/2 tbsp (1 tbsp) oil, then Beyond Meat® patties, yellow onions and peppers. 
  • Cook for 5-6 min, breaking up patties into smaller pieces, until crispy.**
  • Add Applewood Smoke Spice and half the BBQ sauce.
  • Cook for 1 min, stirring often, until fragrant.
Finish and serve

  • Add 1 tbsp (2 tbsp) butter and green onions to the rice. Season with salt and fluff with a fork. 
  • Divide rice between bowls. Top with Beyond Meat® mixture, cheese and crispy shallots. 
  • Drizzle remaining BBQ sauce over top.

If you've opted to get Beyond Meat®, cook for 5-6 min, in the same way as the beef, breaking up patties into smaller pieces, until crispy.** Disregard instructions to drain excess fat.
