Cooking Steps

  • Before starting, preheat the oven to 450°F.
  • Wash and dry all produce.
  • Peel, then cut sweet potatoes into 1-inch pieces.
  • To a large pot, add potatoes, 2 tsp salt and enough water to cover (by approx. 1 inch) (use same for 4 servings). Cover and bring to a boil over high.
  • Once boiling, reduce heat to medium-high. Simmer uncovered for 10-12 min, until fork-tender. 
  • Drain and return potatoes to the same pot, off heat.
  • Mash goat cheese and cream into sweet potatoes until creamy. Season with salt and pepper.

  • Meanwhile, thinly slice mushrooms.
  • Finely chop shallot.
  • Carefully prick tomatoes with a fork.
  • Peel, then mince or grate garlic.
  • Thinly slice chives.

  • Pat steaks dry with paper towels. Season with salt and pepper.
  • Heat a large non-stick pan over medium-high.
  • When hot, add 1/2 tbsp (1 tbsp) oil, then steaks. Cook 1-2 per side, until browned. (NOTE: Steaks will finish cooking in step 4.) Remove from heat and transfer steaks to an unlined baking sheet.
  • Roast in the middle of the oven 5-8 min or until cooked to desired doneness.**
  • When steaks are done, remove from heat and transfer to a plate. Loosely cover with foil and set aside to rest for 2-3 min.

  • Meanwhile, reheat the same pan over low, then add 1/2 tbsp (1 tbsp) oil, then mushrooms and garlic. Cook for 2 min, stirring occasionally, until mushrooms begin to soften.
  • Add tomatoes. Cook for 2 min, stirring occasionally, until tender. 
  • Add kale. Cook for 1-2 min, stirring often, until wilted. Season with salt and pepper.
  • Transfer to a plate.

  • Reheat the pan over low.
  • Add 1 tbsp (2 tbsp) butter, then shallots. Cook for 3-4 min, stirring often, until softened.
  • Sprinkle half the Gravy Spice Blend (use all for 4 servings) over shallots. Cook for 30 sec, stirring often, until coated.
  • Add broth concentrate and 1/2 cup water (1 cup) water. Bring to a gentle boil. Once boiling, cook, stirring often, until gravy thickens slightly, 3-4 min.
  • Remove from heat.

    Tester: Is the temp ok? Does the water amount need to be increased here? Are time ranges accurate?

  • Thinly slice steaks.
  • Stir any steak resting juices into the pan gravy.
  • Divide sweet potato mash between plates. Top with veggie mixture and steak.
  • Spoon gravy over steak, then sprinkle chives over top.
