Instructions

  • Halve, peel, then cut half the onion into 1/4-inch slices. (NOTE: Use remaining onion for a future creation)
  • Add vinegar, 1 tbsp water and 1 tsp sugar to a medium microwave-safe bowl. Season with salt, then stir to combine. Microwave in 15 sec increments, stirring between each, until sugar dissolves. (NOTE: This is your pickling liquid.) Add onions, then set aside to pickle.

  • Meanwhile, roughly tear falafel into quarters.
  • Heat 1 tbsp oil in a large non-stick pan, over medium-high heat.
  • When hot, add falafel pieces. Cook for 4-5 min, stirring occassionally, until golden-brown. Season with salt and pepper.

  • Add guacamole and sour cream to a small bowl. Season with salt and pepper, then stir to combine.

  • Wrap tortillas in paper towels.
  • Microwave until tortillas are warm and flexible, 30 sec. (TIP:You can skip this step if you don't want to warm the tortillas!)
  • Divide tortillas between plates, then top with guac crema, spring mix falafel pieces and pickled onions.
  • Sprinkle feta over top.
