Before starting, preheat the oven to 450°F. Wash and dry all produce. Cut potatoes into 1/2-inch thick wedges. Add potatoes, half the garlic salt and 1 tbsp oil (dbl for 4 ppl) to a parchment-lined baking sheet. Season with pepper, then toss to coat. Roast in the middle of the oven, stirring halfway through cooking, until golden-brown, 25-28 min.
While potatoes roast, heat a large non-stick pan over medium-high heat. When hot, add 1/2 tbsp oil (dbl for 4 ppl), then onions. Cook, stirring occasionally, until slightly softened, 4-5 min. Add 1 tsp sugar (dbl for 4 ppl) and season with salt. Cook, stirring occasionally, until onions are dark golden-brown, 3-4 min. Transfer onions a small bowl and set aside. Carefully wipe pan clean.
While onions cook, roughly chop parsley. Combine pork, parsley, breadcrumbs and remaining garlic salt in a medium bowl. Season with pepper. Form mixture into two 4-inch wide patties (four patties for 4 ppl).
Heat the same pan (from step 2) over medium. When hot, add 1/2 tbsp oil (dbl for 4 ppl), then patties. Pan-fry, until patties are cooked through, 3-4 min per side.** Stir together ketchup and mayo in another small bowl. Set aside.
When patties are done, arrange buns, cut-side up on another baking sheet. Divide cheese between buns. Toast in the top of the oven, until golden-brown, 4-5 min. (TIP: Keep your eye on them so they don't burn!) When buns are toasted, top the bottom buns with patties, onions and top buns.
Divide patty melts between plates. Serve with potato wedges and fry sauce on the side, for dipping.
