Instructions

Roast sweet potatoes

Before starting, preheat the oven to 450°F and wash and dry all produce. Add sweet potatoes, 1/2 tsp Old Bay Seasoning and 1 tbsp oil (dbl both for 4 ppl) to a parchment-lined baking sheet. Season with salt and pepper, then toss to coat. (NOTE: For 4 ppl, use 2 parchment-lined baking sheets, with 1/2 tsp Old Bay Seasoning and 1 tbsp oil per sheet.) Roast in the middle of the oven, flipping halfway through, until tender and golden-brown, 22-24 min.(NOTE: For 4 ppl, roast in the middle and the bottom of the oven, rotating sheets halfway)

Make DIY dill ranch

While sweet potatoes roast, finely chop dill. Whisk together sour cream, mayo, 1/4 tsp garlic puree, 1/2 tbsp vinegar, 1/2 tsp sugar (dbl all for 4ppl), half the dill, salt and pepper in a small bowl.

Prep green beans

Toss green beans and remaining garlic puree with 1/2 tbsp oil (dbl for 4ppl) on one side of a foil-lined baking sheet. Season with salt and pepper. Set aside.

Bake salmon and beans

Pat salmon dry with paper towels, then sprinkle 1 tsp Old Bay Seasoning (dbl for 4 ppl) all over. Add salmon to the other side of the foil-lined baking sheet. Roast in the top of the oven until salmon is almost cooked through, 3-4 min. (NOTE: We will finish cooking salmon in step 5.)

Finish salmon and beans

When salmon is almost cooked through, turn the broiler to high. Broil salmon and beans in the middle of the oven until salmon is cooked through and golden, 2-3 min.**

Finish and serve

Divide salmon, green beans and sweet potato fries between plates. Sprinkle remaining dill over salmon. Serve DIY dill ranch on the side for dipping.
