Serves 4 | with Creamy Goat Cheese and Thyme

Thyme-roasted grapes are the star of this show-stopping appetizer. The juicy fruit sits on creamy whipped goat cheese and gets finished with a drizzle of honey-balsamic glaze. Perfection!

Cooking Steps

Prep

  • Before starting, preheat the oven to 450F. Wash and dry all produce.
  • Halve grapes. (NOTE: For larger grapes, quarter instead.)
  • Cut baguette into 1/2-inch slices.
  • Strip 2 tsp thyme leaves from stems, then finely chop.
  • Add baguette slices and 2 tbsp oil to an unlined baking sheet. Season with salt and pepper, then toss to combine. Bake in the middle of the oven for 3-4 min, until lightly golden. Remove from the oven and set aside.
Make goat cheese spread

  • To a medium bowl, add cream cheese, goat cheese and 1 tsp thyme. Season with 1/4 tsp salt and 1/4 tsp pepper, then stir to combine. 
  • To a small bowl, add balsamic glaze and honey, then stir to combine. (NOTE: If honey has crystallized, place in a small bowl in the microwave for 10 sec to liquefy.)
  • To another medium bowl, add grapes, 1 tbsp oil and 1/2 tsp thyme. Season with salt and pepper, then toss to combine.
  • Set oven to broil.
Assemble crostini

  • Spread goat cheese mixture evenly over crostini.
  • Top crostini with grape mixture.
  • Return crostini to the middle of the oven for 2-3 min, until grapes are soft.
Finish and serve

  • Remove roasted grape crostini from the oven and arrange on a serving platter. 
  • Drizzle balsamic glaze mixture over top.
