Instructions

Cook bacon

  • Cut bacon into 1/4-inch pieces. (TIP: Use kitchen shears to cut bacon with ease!)
  • Heat a large non-stick pan over medium heat.
  • When hot, add bacon. Cook, flipping occasionally, until crispy, 5-7 min.**
  • Remove from heat. Using a slotted spoon, transfer bacon to a paper towel-lined plate. Set aside.
Finish prep

  • Zest, then juice half the lemon. Cut remaining lemon into wedges.
  • Peel, then mince or grate garlic.
  • Halve eggs, then season with salt and pepper.
Make salad

  • Add half the caesar dressing, 2 tsp lemon juice, 1/2 tsp lemon zest, 1/4 tsp garlic and 1/4 tsp sugar to a large bowl. Season with salt and pepper, then whisk to combine.
  • Add kale, then stir to combine.
  • Add spinach, croutons, bacon and half the Parmesan, then toss to combine. 
Finish and serve

  • Divide caesar salad between plates.
  • Top with eggs.
  • Drizzle remaining caesar dressing over top, then sprinkle with remaining Parmesan.
  • Squeeze a lemon wedge over top, if desired.
