Cooking Steps

Make koftas
1
  • Before starting, preheat the oven to broil.
  • Halve zucchini lengthwise, then cut into 1/4-inch half moons.
  • Roughly chop parsley.
  • Juice half the lemon, then cut remaining lemon into wedges.
  • To a medium bowl, add pork, 1/4 tsp garlic salt, Italian breadcrumbs and half the parsley. Season with pepper, then combine.
  • Roll pork mixture into six 2-inch logs.
Broil koftas and zucchini

  • On one side of an unlined baking sheet, arrange koftas.
  • To the other side of the baking sheet, add zucchini and 1 tbsp oil. Season with 1/4 tsp salt and pepper, then toss to coat.
  • Broil in the middle of the oven for 8-12 min, until zucchini are tender and koftas are cooked through.**
Toast almonds

  • Meanwhile, heat a large non-stick pan over medium.
  • When hot, add almonds to the dry pan. Toast for 2-3 min, stirring often, until golden. (TIP: Keep your eye on them so they don't burn!) 
    Transfer to a plate.
Finish and serve

  • Add lemon juice, 1 tbsp oil and 1/4 tsp sugar to a large bowl. Season with 1/8 tsp garlic salt and pepper, then whisk to combine. 
  • Add spinach, then toss to combine. 
  • Divide spinach between plates, then top with zucchini and koftas. Sprinkle toasted almonds, remaining parsley and feta over top. 
  • Dollop yogurt sauce over top.
  • Squeeze a lemon wedge over koftas.
