Cooking Steps

  • Preheat the oven to 425°F. Wash and dry all produce.
  • Trim ends of squash, then cut in half lengthwise. Using a spoon, scrape seeds out and discard. Cut squash into 1/4-inch thick half-moons.

  • To a parchment-lined baking sheet, add squash, 1 tbsp oil and maple syrup. Season with half the Zesty Garlic Spice Blend, salt and pepper, then toss to coat. Spread out in an even layer.
  • Roast on the middle rack of the oven for 20-24 min, flipping halfway through, until golden and tender.

  • Heat a medium non-stick pan over medium-high heat.
  • When hot, add almonds to the dry pan. Toast for 4-5 min, stirring often, until golden. (TIP: Keep your eye on them so they don't burn!) 
    Transfer to a plate.
  • Line a plate with paper towels. Set aside.
  • When the pan is hot, add 2 tbsp (4 tbsp) oil, then sage leaves. Fry until crisp, 1 min. (TIP: We love to use olive oil for frying sage.)
  • Using a slotted spoon, transfer fried sage to the paper towel-lined plate. Season with salt while hot. Set aside.

  • Plate squash on a large serving dish.
  • Sprinkle over fried sage and almonds.
