Cooking Steps

  • Before starting, preheat the oven to 450°F.
    Wash and dry all produce.
  • Pat chicken dry with paper towels. Season with Applewood Smoke Spices, salt and pepper.

  • Heat a large non-stick pan over medium-high heat. When hot, add 1/2 tbsp oil, then chicken. Sear for 2-3 min per side, until golden-brown. 
  • Transfer chicken to a parchment-lined baking sheet.
  • Roast in middle of oven for 10-12 min, until cooked through** 
  • Once chicken is in oven, add another 1/2 tbsp oil to the pan, then carrots. Cook for 1-2 min, until carrots are tender. Season with salt and pepper.

  • When chicken is done, use transfer to a large plate or a clean surface.
  • Using two forks, shred chicken into bite-sized pieces.
  • To a large bowl, add shredded chicken, carrots and BBQ Sauce. Toss to coat.

  • If making ahead, put pulled chicken mixture in a container. 
  • When ready to pack or serve lunch, place 1/3 cup chicken on bottom bun, then place top bun on sandwich. 
  • If eating right away, toast bun before filling with chicken!
