Cut cucumber into quarters lengthwise. Core, then cut pepper into 1/4-inch slices. Core then cut the apple into 1/2-inch wedges.
Spread cream cheese over each tortilla. Spoon marinara over top, then top with spinach, peppers and sprinkle with cheese. Sprinkle half the garlic salt over top tortillas. Tightly roll each tortilla over filling. Transfer assembled tortillas to a plate, cover and microwave on high until cheese is melted, 1 min.
Serve pizza roll-ups with cucumber and apple wedges on the side.
