Hearty Chorizo and Veggie Chili

with Tortilla Chips

Simple but fantastic, this delicious chili is filled with beans, bell peppers and tomatoes. Each bite is tender and comforting. We suggest using the tortilla chips to scoop up every last drop!

Cooking Steps

Prep

  • Before starting, wash and dry all produce. 
  • Core, then cut pepper into 1/4-inch pieces.
  • Thinly slice green onions.
Cook chorizo and veggies

  • Heat a large pot over medium.
  • When hot, add 1/2 tbsp (1 tbsp) oil, then chorizo, mirepoix and peppers. Season with salt and pepper. 
  • Cook for 4-6 min, breaking up chorizo into smaller pieces, until veggies start to soften and chorizo is cooked through.**
  • Meanwhile, drain and rinse beans.
Add spices

  • To the pot with chorizo and veggies, add Mexican Seasoning and 1/8 tsp (1/4 tsp) chipotle powder. (Like things spicy? Add more chipotle powder!)
  • Cook for 1 min, stirring often, until fragrant.
Cook chili

  • To the pot, add crushed tomatoes, beans, broth concentrate and 3/4 cup (1 1/2 cups) water. Bring to a boil over high.
  • Once boiling, reduce heat to medium.
  • Simmer for 12-15 min, stirring occasionally, until chili thickens slightly.
  • Season with pepper, if you like.
Finish and serve

  • Divide veggie chili between bowls.
  • Dollop sour cream over top, then sprinkle with cheese and green onions.
  • Serve tortilla chips alongside for dipping.

If you've opted to add chorizo, heat a large pot over medium-high. When hot, add 1/2 tbsp (1 tbsp) oil, then chorizo, mirepoix and peppers. Season with salt and pepper. Cook for 4-6 min, breaking up chorizo into smaller pieces, until veggies start to soften and chorizo is cooked through.** Follow the rest of the recipe as written.
