Make spinach salad

  • Halve tomatoes.
  • Add vinegar, 1 tbsp oil and 1/4 tsp sugar (dbl both for 4 ppl) to a medium bowl. Season with salt and pepper, then whisk with a fork to combine. Add tomatoes, spinach and carrots, then toss to coat.
  • Transfer salad to a plate.

  • Thinly slice chives.
  • Using a fork, mash together eggs, mayo, Dijon and chives in the same medium bowl.
  • Season with salt and pepper, then stir to combine.
Finish and serve

  • Halve buns
  • Spread egg salad on bottom buns. Close with top buns.
  • Serve spinach salad alongside.
