Cooking Steps

  • Before starting, preheat the broiler to high.
    Wash and dry all produce.
  • Line a baking sheet with foil, then set aside. 
  • Heat a large non-stick pan over medium. Add 1 tbsp oil, then panko. Cook for 1-2 min, stirring often, until lightly golden. 
  • Transfer to a shallow dish.

  • Pat chicken dry with paper towels. Season with garlic salt and pepper. 
  • Coat chicken all over with mayo. Working with one piece of chicken at a time, press both sides into panko to coat completely. (TIP: Using gloves, makes this much easier!)
  • To the prepared baking sheet, add chicken.

  • Broil in the middle of the oven for 9-12 min, flipping once, until cooked through.**
  • Using tongs, transfer chicken to a wire rack. Leave to cool for 3-5 min.

  • Once cooled, divide chicken between plates.
  • Serve with BBQ sauce and ranch on the side for dipping.
