Add 2 tbsp butter, 1/8 tsp salt, peanut butter, chocolate chips and honey to a medium pot. Heat pot over low heat. Cook, whisking often, until chocolate chips melt and mixture is combined and smooth, 3-4 min.
While chocolate mixture melts, line a 9x3-inch loaf pan with parchment paper. (NOTE:The parchment should hang over 2 edges of the baking dish. This helps to easily remove bar mixture from the pan once chilled.)
Add corn flakes to the medium pot with melted chocolate mixture. Using a spatula, stir to combine. Transfer mixture to the prepared loaf pan, spreading out in an even layer with the spatula. Sprinkle peanuts over top. Cover baking dish with plastic wrap. Refrigerate until chocolate sets, 2 hrs.
Using the parchment overhang, lift set bar mixture out of the baking dish. Cut into 8 equal-sized bars. Transfer to a serving dish.
