Cooking Steps

Cook orzo
1
  • Before starting, preheat the oven to 450°F.
Bring a large pot of salted water to a boil (use same for 4 servings).
  • Wash and dry all produce.
  • To the boiling water, add orzo.
  • Cook for 8-10 min, stirring occasionally, until tender but still firm to the bite. Reserve 1/2 cup (3/4 cup) pasta water.
  • Strain orzo, then return to the pot, off heat. Stir in 1 tbsp (2 tbsp) butter.
Prep veggies
2
  • Halve tomatoes.
  • Trim ends off broccolini, then cut any larger stalks in half lengthwise, leaving thinner stalks whole. Halve all stalks crosswise.
  • Thinly slice chives.
Toast breadcrumbs
3
  • Meanwhile, heat a large non-stick pan over medium.
  • When the pan is hot, add 1 tbsp (2 tbsp) butter and breadcrumbs.
  • Toast, stirring often, for 1-2 min, until butter melts and breadcrumbs are golden.
  • Remove from heat.
Prep and roast tilapia
4
  • Meanwhile, pat tilapia dry with paper towels, pressing firmly to absorb as much moisture as possible. Season with salt, pepper and half the Zesty Garlic Blend.
  • To parchment-lined baking sheet, add tilapia.
  • Spread mayo over top of tilapia.
  • Sprinkle toasted breadcrumbs over mayo, pressing down gently to adhere.
  • Roast in the middle of the oven for 12-15 min, until golden and crisp.**
Finish orzo
5
  • Meanwhile, reheat the same pan (from step 3) over medium.
  • When the pan is hot, add 1 tbsp (2 tbsp) butter, broccolini and tomatoes. Cook for 3-4 min, stirring often, until tender-crisp.
  • Add stock powder, remaining Zesty Garlic Blend, orzo and reserved pasta water. Stir to combine. Bring to a simmer 1-2 mins.
  • Once simmering, reduce heat to medium.
  • Add Parmesan. Stir until cheese melts and mixture thickens slightly and coats orzo, 2-3 min.
  • Season with pepper.
Finish and serve
6
  • Divide broccolini-tomato orzo between plates.
  • Top with tilapia.
  • Sprinkle chives over top.
