Cooking Steps

Prep and marinate cucumbers

  • Before starting, wash and dry all produce. Gather all required tools.
  • Thinly slice cucumber. 
  • To a small bowl, add vinegar, 1/2 tbsp sugar, a pinch of salt and half the sesame oil. Whisk to combine.
  • Add cucumbers and carrots, then stir to combine. Set aside in the fridge to marinate.
Toast sesame seeds

  • Heat a large non-stick pan over medium-high.
  • When hot, add sesame seeds to the dry pan. Toast for 3-4 min, stirring often, until golden. (TIP: Keep your eye on them so they don't burn!)
  • Transfer to a plate.
Cook pork filling

  • Reheat the same pan over medium-high. When hot, add remaining sesame oil, then pork. Cook for 4-5 min, breaking up pork into smaller pieces, until no pink remains.**
  • Reduce heat to medium, then add sweet chili sauce, oyster sauce and 2 tbsp warm water. Season with pepper, then stir to combine.
Finish and serve

  • Meanwhile, remove and discard outer layer of iceberg lettuce. Halve lettuce, then separate 8 leaves from the head. Set aside. (NOTE: Use remaining lettuce for a future creation!)
  • Roughly chop cilantro.
  • Divide lettuce leaves between plates, then top with pork filling. Top with marinated cucumbers and carrots.
  • Sprinkle sesame seeds and cilantro over top.
