Cooking Steps

Prep

  • Before starting, preheat the broiler to high. Wash and dry all produce.
  • Halve tomatoes. 
  • To a small bowl, add 1 tsp oil and half the garlic powder. Stir to combine.

  • Halve buns. On an unlined baking sheet, arrange buns cut-side up. Brush garlic-oil mixture over buns. 
  • Broil for 1-2 min, until golden. (TIP: Keep an eye on them so they don't burn!)

  • To another small bowl, add ricotta, cream cheese and remaining garlic powder. Season with salt and pepper, then stir to combine. Set aside.
  • To a medium bowl, add tomatoes, 1/2 tbsp oil and vinegar. Set aside.

  • Spread ricotta mixture over buns, then divide between plates. 
  • Using a slotted spoon, top with tomato mixture. 
  • Add arugula and spinach mix to the bowl with remaining dressing. Season with salt and pepper, then toss to combine.
  • Place on top of tomatoes.
